Vegan Steak Tacos

Love tacos soooo much, but at least once a week I like to have a meat free day. When I do cut out meat it has to be replaced by something delicious, and one product I really like is Vivera, and in this recipe I'll be using their plant based steaks to make these quick and easy tacos.

Ingredients

1 pack of Vivera plant based steaks, sliced

2tbsp taco seasoning, you can buy a ready made one or a homemade one (see below)

1tbsp olive oil

For the homemade taco seasoning mix

1tbsp mild chilli powder

1sp ground cumin

1tsp ground coriander

1tsp smoked paprika

1tsp oregano

1tsp garlic powder

1/2tsp salt and pepper

For the guacamole

1 ripe avocado

1 lime

1/2 red onion, finely diced

8 cherry tomatoes, seeds removed and diced

1/2 a red chilli, seeds removed and finely diced

Small handful of fresh coriander, roughly chopped

2tsp extra virgin olive oil

Salt and pepper to taste

To assemble

2 tortilla wraps (freeze the rest for another day)

4 radishes, thinly sliced

1 small lettuce, thinly sliced

A few cherry tomatoes, diced

Pickled jalapeños

2 tbsp fresh coriander

Method

To start, mix all the taco seasoning spices together if using.

In a bowl put the steak slices and drizzle with the olive oil, now pour in your taco seasoning, and mix well to coat all the pieces of steak, leave while you make your guacamole.

Spoon out the flesh of the avocado and roughly chop, quickly covering in the juice of half your lime so it doesn't turn brown.

Now put it in a bowl and mix with all the other guacamole ingredients, including the other half of the lime juice. Set aside and let the flavours say hello to each other.

Heat a frying pan to a medium heat and cook the steak slices according to cooking instructions, because we've sliced it just cook for the full amount of time, stirring occasionally.

Now warm the tortilla and spoon on some of your guacamole, then a layer of crunchy sliced radish, lettuce and finally the delicious steak.

Garnish by sprinkling with the diced tomatoes, jalapeños and fresh coriander!!
