The tastiest yet simplest recipe you'll come across.
Tomatoes, rocket and lemon are match made in heaven and this sharp but sweet pasta sauce will be a hit with the whole family.
If you prefer not to cook with alcohol then swap the wine out for water, the real star of the sauce are those delicious tomatoes as they break down. 🤩

350g dried long pasta, such as spaghetti or linguine
2tsp olive oil
3 garlic cloves, peeled and finely sliced
150ml white wine (if you prefer not to cook with wine add the same amount in hot water instead)
2tbsp tomato puree
120g cherry tomatoes, sliced in half
Juice of 1 medium lemon
30g rocket, roughly torn
Salt & Pepper to taste
Turn a large saucepan of water on to boil, add a pinch of salt. Once the water is boiling add your pasta and cook according to packet instructions. Try and time it so that it'll be ready when your sauce is. The sauce should take 15 mins maximum to cook.
In a large sauté pan or deep frying pan add the oil and turn it on to a medium heat.
Once you are happy with the temperature of the oil add all of the garlic. Gently cook for about 3 minutes until fragrant.
Once your garlic is just fragrant add in your white wine (or hot water), tomato puree and fresh cherry tomatoes. If your tomatoes were on the vine you can add the whole vine part to the sauce while we make it, it adds more flavour, Just be sure to remove it before you stir in the pasta.
Tune the heat up to high and cook until the wine (or water) has reduced by 2 thirds and the tomatoes have started to break down
Once the wine has reduced and the tomatoes have begun releasing all their tasty juices add in the lemon juice and stir.
Your pasta should be ready by now. Add a small ladle of your pasta water in to the sauce then drain the pasta.
Add the pasta to your sauce and stir until everything is coated.
Add the rocket and toss through the pasta.
Have a taste and add some salt and pepper if you feel it needs it.
Serve.
