Teriyaki Tuna Skewers

If you're looking to try something new on the bbq or just a healthier midweek meal then stop right here. This delicious summer recipe is a must for anyone looking to impress. Tuna is such a meaty fish it takes on this marinade like a boss, you can have it over a whole tuna steak or like me skewer big chunks and pair with lots of crunchy veg and you basically have a stir fry on a stick!

Prep time 10mins (plus 20mins for marinating)

Cooking time 10mins

Ingredients

3 to 4 tuna steaks

2 onions, cut into wedges

2 red peppers, cut into chunks or squares (see pic)

For the Marinade

120ml soy sauce

2tbsp honey

1tbsp brown sugar or caster sugar

2 garlic cloves, grated with a microplane grater, or crushed

Thumb sized peice of ginger, grated

2tbsp sesame oil

To Garnish (optional )

2 spring onions, finely sliced

1tsp sesame seeds

Method

Cut the tuna into large chunks and set aside.

In a bowl mix all of the marinade ingredients together, whisking well until the sugar has dissolved.

Assemble the skewers by placing the prepared onion, peppers and tuna alternatively.

Place on a plate and brush with the marinade on all sides, this should use about 2 thirds of the marinade, keep the remainder to use for basting the skewers while they cook. Place in the fridge and let the flavours work their magic for 20 mins.

Place on a hot bbq or on the grill in the oven and cook for 2 mins each side and the turning, baste half way through with the spare marinade, be careful if you are using metal skewers as they will be hot, in total you should be cooking them for about 10 mins, you can cook for slightly longer if your don't want the tuna pink in the middle.

Once cooked to your liking, remove from the heat, sprinkle with your garnishes if using and serve with a delicious summer salad!

Tip-

Broccoli is a delicious extra to add to the skewers, it adds to the stir fry style flavour and when bbq broccoli is awesome, so add a couple of small florets to your skewer for extra yumminess!
