Prawn Chow Mein

Out of all my easy chow mein recipes the king prawn one has to be my favourite. The bigger the prawns you can afford the better, there's nothing worse then sitting down to enjoy a prawn dish and you have to dig deep to find just a couple of small prawns!!

This super speedy dish will be a hit in your house, and if you don't like prawns check out my chicken or beef versions to!

Please read the method before you start prepping, as it literally takes minutes to cook, it's good to get a rough idea of what ingredients go in and when. I like to get the prepped veggies lined up in order and ready to go.

Prep time 20mins

Cooking time less then 10mins

Ingredients

200g raw king prawns (I try to get red Argentinian shrimp if I can)

1tbsp cornflour

1tbsp rice wine vinegar

3tbsp veg or groundnut oil

3 garlic cloves, crushed

1 inch piece of ginger, peeled and cut into matchsticks

1 onion, peeled and cut into wedges

1 carrot, peeled and julienned

Handful of sugar snap peas, cut into thirds

2 spring onions, sliced diagonally

Handful of beansprouts

2 portions of precooked noodles

For the Chow Mein Sauce

120ml oyster sauce

2.5tbsp soy sauce

1tbsp honey

1tbsp sesame oil

Method

In a bowl mix the cornflour and the rice wine vinegar until you have a slurry looking mix, this technique is called velveting and it's what is going to keep the prawn nice and juicy. Add the prawns to the cornflour and rice wine mix, coating well and set aside for about 5mins.. you can use this time to prep your veggies.

In another  bowl mix all of your chow mein sauce ingredients together... its important to have everything ready because the cooking of this dish is so quick!

Once your veg are all prepped and your sauce is ready heat 2tbsp of oil in a wok or deep frying pan on a high heat and add the prawns. Stir fry it until they are just cooked, around 4 mins dependant on size. Once cooked through remove from the wok and set aside.

In the wok add the remaining oil (1tbsp) over a medium heat and add the garlic and ginger, cook until fragrant, stirring constantly so that it doesn't burn. This should take 2 mins.

Now add the onion and cook for 2mins, again stirring constantly.

Now in with the carrot, sugar snap peas and spring onions, stir fry for 1 minute.

Now add in the cooked prawns, beansprouts, precooked noodles, cook for 1 minute then add your delicious chow mein sauce and continue to cook for another 2 mins, stirring to ensure its all coated.

Dish up while its steaming and enjoy!!
