Ever wondered what to do with that random pack of sausages in the fridge, I've got your back! You won't believe just how delicious these smoky pork quesadillas are, the whole family will love them!

1tsp smoked paprika
1/2tsp chipotle flakes (they do add spice kick so substitute for mild chilli powder if you prefer less heat)
1tsp dried organo
1/2tsp garlic powder
1tsp ground coriander
Little salt & pepper, about 1/2tsp of each
3tbsp olive oil, some for cooking and some for brushing the tortillas
4 good quality pork sausages, skins removed
1 red pepper, cored and diced
1 onion, diced
Smoky spice mix
Small handful of chopped coriander
4 tortilla wraps
1 pouch of ready prepared refried beans (you may have to zap in the microwave so do that if it says so on the packaging)
200g approx grated mozzarella
In a frying pan add 1tbsp of olive oil on a medium to high heat.
Once the oil is heated add the sausage meat, breaking it up as it cooks. Aim for a crumble type texture. (see YouTube video)
Once the sausage meat is cooked through add the pepper and onion turn the heat down slightly and continue to cook until softened.
Put your spices in to a mug or teacup, add about 100ml of water and give it a quick stir. Pour this in to the pan with the sausage meat and veggies. By mixing with water first the spices won't stick to the pan and burn. Don't worry the water will cook out.
Cook on a medium heat until all of the water has gone and the spices are lovely and fragrant.
Throw in your chopped coriander, give it a stir and then set aside for a few minutes to cool.
Take one of the tortilla wrap and brush one side only with some olive oil, flip the wrap and on the un-oiled side load it up with filling. Do this by firstly adding some of your pork meat mixture to one side of the wrap (we will fold it over like a half moon) on top of the pork add a few teaspoon of the refried beans and then some grated cheese on top of that. Now fold it over. (see video)
Heat a non stick frying pan on a medium to high heat and lay the quesadilla in the pan. Leave to cook for about 3 minutes until golden, carefully flip it over and cook the other side for 3 minutes until also golden and crisp. Keep an eye on the quesadilla while its cooking, if it begins to burn turn the heat down and you can always brush the pan with a little oil to stop it from catching.
Repeat the process with the other 3 wraps. Then enjoy!!
