A quick and easy recipe that really lets the skate wing do all the talking. If like me you'd never tried skate before then you are REALLY missing out, my mum and dad always told me how delicious it was and its now one of my favourites. This lightly dusted wing is complemented with a zingy gremolata style dressing, add some buttery new potatoes if you want a bigger meal.

2 medium skate wings, fully prepped by your fishmonger
3tbsp plain flour, seasoned with salt and pepper
3tbsp olive oil
1 large garlic clove, crushed
2tbsp extra virgin olive oil
1.5tbsp freshly squeezed lemon juice
2tbsp chopped fresh parsley
2tbsp chopped fresh basil
1tsp wholemeal mustard
Salt and pepper to taste
2 wedges of lemon

Heat the olive oil in a pan to a medium to high temp, and heat the oven to the lowest setting.
Dust both sides of the skate in the seasoned flour, and place in the pan, allow to cook for 5 mins and then turn and cook on the other side for 5 mins. It should be cooked by now, we are looking for the flesh to pull away from the bones easily and look white. Flip and leave in the pan for a few moments longer if need be but this time should be sufficient.
Once cooked place this wing on a lined tray and pop in the oven to keep warm, repeat the process with the other wing.
With the gremolata, simply place all the ingredients in a small bowl and mix well, leave for at least 5 mins before using.
Serve simply with the dressing over the top and garnishes, or with some buttery new potatoes.
