Everyone's favourite takeaway dish but made at home, these will really impress your dinner guests when your cooking up a Chinese storm. Ive chosen to use wedges in this recipe but chips are just as good and if you really want to take a short cut don't use homemade chips just buy some frozen steak cut chips!! Winning!!
Warning.. they pack a punch so use less fresh chilli if you want it a little more mild.
Prep time 15 mins
Cook time 15 mins
4 portions of fully cooked homemade wedges, par boiled and crisped in the oven (you can use cooked plain frozen chips or wedges)
2 green peppers, cut in to chunks
2 onions, cut into wedges
2 red chillis, sliced
1tbsp rice wine vinegar
1tbsp veg oil
2tbsp of salt and chilli seasoning (see below)
1tbsp Chinese 5 spice
1tbsp course salt
1tsp garlic powder
1tsp ground white pepper
2tsp chilli flakes
1tsp caster sugar
Pre mix all your seasoning ingredients in a bowl, set aside.
Heat the oil in a wok or large frying pan, once hot add the chopped pepper and onion, cook for a few mins, we want it cooked but still have a crunch like all good Chinese dishes.
After about 3 mins add the sliced chilli, cook for another minute.
Pour in the rice wine vinegar and let cook for a minute.
Add in your precooked wedges/chips and 2 tbsp of the salt and chilli spice mix.
Toss it all around and cook through for a couple of minutes until the potatoes are heated through.
Pour into a big bowl and dig in, you can always garnish with some finely sliced spring onion if you have any knocking around.
