Nando Style Macho Peas

Peas will never be the same again after you try these epic Nando style macho peas. They're a favourite in our house and they spice up most midweek meals. Give them a try you'll love them!!

Ingredients

200g frozen peas

1tsp salt

1tsp chilli flakes

1tsp pepper

1tbsp chopped mint (a tbsp of mint sauce if you have no fresh mint)

1tbsp chopped parsley (dried will do)

1tbsp extra virgin olive oil



Method

Pop the peas into a saucepan of salted boiling water and cook until nice and tender, about 5 mins.

Drain the peas and split them into two.

With one lot of peas, using a fork crush them up, we don't want mushy peas just gently crushed. If doing a bigger portion you can use a potato masher.

Pop the crushed peas back in with the whole peas mix together.

Add all of the seasonings, herbs and olive oil into the peas and mix until they are all coated evenily.

Taste a little here and tweak any seasoning, I normally add a little more salt and a little more chilli but everyone is different.
