Sticky bbq ribs have never been my first choice of food, I used to find them a lot of hard work to eat and not really that satisfying... until I made my own. By making them yourself you get to select the meatiest ribs and in this case pick out your favourite bbq sauce to cover them in... its not all cheating though.. to ensure we get flavour deep into those ribs my recipe calls for a dry rub marinade that will add a lovely flavour and a slight kick of heat to really penetrate the lovely tender meat.
I've made my own bbq sauce plenty of times before but this is a minimum fuss maximum flavour recipe that you can just leave in the oven and get on with your day!!
Prep time 5mins (+1hr marinading time minimum)
Cooking time 3.5hrs
1kg Pork ribs
2tbsp paprika
1tbsp ground cayenne pepper
1tbsp dried oregano
2tbsp brown sugar
1tsp onion powder
1tsp ground black pepper
1tsp course salt
500ml roughly, hot water
300ml roughly of your favourite bbq sauce
Lets start by marinading the pork ribs.
Use some kitchen towel to pat dry the ribs. Next in a small bowl mix all of the herbs and spices together. So that includes the .. paprika, cayenne, oregano, sugar, onion powder, pepper and salt.
Once you've mixed the dry herbs well coat the ribs all over with it. Cover with cling film and leave in the fridge for at least an hour but preferably over night.
After you've left the pork ribs for your desired marinading time, remove from the fridge for approx 15 minutes before cooking and pre heat the oven to 160c.
If they aren't already on one place the ribs in a roasting tin and pour in the hot water trying not to get the top of the ribs to wet, you will need around a 1/2inch of water in the bottom of the roasting tin, but please be careful not to fully cover the ribs (see below)
Cover with foil and then pop in the oven for 2.5hrs... check on them every 45mins or so to make sure they've not dried up, if they have top them up with a little bit more water and baste them each time you check.
After 2.5 hours take them out of the oven and turn the temperature up to 180c.
Carefully brush the ribs generously on both sides with your bbq sauce and pop back in the oven for 30 mins uncovered.
Remove from the oven after 30 mins, they should be falling off the bone, you can serve them now with a little pot of extra bbq sauce for dipping and some yummy coleslaw, but if you prefer your ribs to be tender but with a tiny bit of bite, cover them in foil and leave to rest for 20 mins before serving.
