Is there a better match then the flavours of cherry and almond together? This is one of my favourite winter warmer desserts and one that we love after a big roast dinner on a Sunday. Its speedy to and will take no longer then 45 mins from start to finish.. winning.
Prepare ahead and then bung in the oven to warm through when you fancy it.
Prep time 15 mins
Cooking time 30mins
800g frozen black cherries
2tsp cornflour
2tsp sugar
100g butter, cold butter
130g plain flour
70g ground almonds
20g granulated sugar
30g Demerara sugar (you can just use 50g of granulated sugar if you don't have any of this)
Small handful of sliced almonds.
Preheat the oven to 170c
In a saucepan add the frozen cherries and heat gently until they are defrosted and releasing their juices.
Add the cornflour and 2tsp of sugar cook on low for about 5 mins until thickened... (alternatively buy 2 tins of black cherries and skip the first two steps all together)
In a bowl mix the butter, flour and almonds by rubbing in your finger tips until you get a fine breadcrumb mixture. Add the sugar and mix well.
Pour the cherry mixture into an oven proof dish and then top with the crumble mixture. Sprinkle over the almonds.
Place in the oven for 25mins or until the crumble is golden and crunchy.
Serve with some lovely custard or double cream.
