Fancy Scotch eggs with a twist, then try these delicious asian inspired scotch eggs, with seasoned pork mince and a crispy panko and sesame seed crust. They are a real treat for the whole family and by cooking them in the air fryer you'll have less mess, less fat and extra crunch!!

5 large eggs, 4 for the scotch eggs 1 for coating (you could even boil an extra egg as a spare if you want)
600g pork sausage meat, you can squeeze them out of the sausage skins if you can't find it.
2 lemongrass stalks, peel off outer layer then finely chop the rest, except the root at the very bottom.
1tbsp ginger puree
2tsp of finely chopped coriander stalks
1tsp soy sauce
Salt & pepper
2 heaped tbsp plain flour
70g panko breadcrumbs
2tsp sesame seeds
2tsp black sesame seeds (or you can substitute for more white sesame seeds)
First of all lets start with the eggs. Depending on how you cook them could have an effect on the runny-ness of the yolk but this is how I did mine.
If you have a steam function on your air fryer (mine is a Tefal EasyFry) steam 4 of your eggs for 7minutes, then remove and place in ice cold water immediately to stop the cooking process.
While your eggs cool down move on to the sausage meat mixture.
In a mixing bowl place the sausage meat, finely chopped lemon grass, ginger puree, chopped coriander stalks, soy sauce and a small pinch of salt and pepper (no more the 1/4tsp of each)
Mix everything together until well combined and then form in to 4 meatballs.
Carefully peel your 4 eggs.
Prepare your coating... beat your raw egg in a bowl, place your flour on a small plate and season with a little pinch of salt and pepper, place your panko breadcrumbs and sesame seeds on a plate and mix well to combine.
Now grab a sausage meatball and place between 2 pieces of baking paper. You can flour the meatball lightly if your worried it will stick. Lighty roll the meatball out until its large enough to coat an egg.
Take a peeled egg and wrap in the flattened sausage meat, use your hands to mould it until the egg is completely covered. Repeat this with the other 3 peeled eggs until you have 4 'naked' scotch eggs.
Now to coat. Grab one of your sausage wrapped eggs, first roll in the plain flour until fully coated, next roll it in to beaten egg until coated and then lastly in to the panko/sesame mix ensuring the egg is generously coated in the breadcrumb mixture. Place in to your air fryer and repeat with the other 3 eggs.
Place in your airfryer at 180ºc for 20 minutes, turning halfway.
Remove and allow them to cool for a few minutes then sliced in to one, you should have runny/soft yolk, perfectly cooked sausage meat and a golden crisp coating.
Always make sure the sausage meat is fully cooked and then enjoy!!
