Asian Broccoli Salad

Change up your healthy eating with this gorgeous satay inspired dressing, it works beautifully when paired all the ingredients of a stir fry but in a healthy salad.


Serves 2

Prep time 20 mins



Ingredients

1 small broccoli, or a handful of fresh florets

Half a cucumber, sliced

1 large carrot, shredded

For the Satay Dressing

35g peanut butter, smooth is best but crunchy works

2tbsp rice wine vinegar

1tbsp soy sauce

1tbps honey

1 garlic clove crushed

2tbsp extra virgin olive oil

1tsp sesame seeds



Method

Firstly trim your broccoli florets into small pieces, you can also slice the stalks of the florets thinly and use those for bit of extra pizazz. (see image)

Mix all the satay dressing ingredients in a bowl and allow to sit for 10mins to let all the flavours blend together.

Arrange all of your salad ingredients onto a plate and then drizzle generously with the peanut dressing and sprinkle some extra sesame seeds over the top.

Serve as a delicious side, works really well with a piece of grilled salmon.
