Fancy a satisfying guilt free lunch then Ramen is your answer. As long as you get the broth flavour right then you can pack it full of whichever veg you like, or have to use up. I also like to add beef jerky to the top of mine if im in a real rush for a healthy portion of protein. In this recipe I use miso paste but you can replace it with Chinese 5 spice if you can't get hold of the miso.

500ml hot beef stock
2tbsp miso paste (or 2tsp of Chinese 5 spice)
1tbsp soy sauce
1 garlic clove, grated
1tbsp ginger, grated
2 nests of dried noodles
Handful of beansprouts
2x 25g packs of jerky (I like Jacklinks)
Leaves of 1 pak choi
1tsp sesame seeds
1tbsp chilli oil (optional)
2 radishes, thinly sliced
1 spring onion, thinly sliced
In a saucepan over a medium heat, pour in the beef stock.
Add miso paste, soy sauce and grated garlic and ginger, give it a stir and leave to bubble away for a few mins.
Add the dried noodle nests straight into the broth and cook until just tender. (about 3 mins)
Add the beansprouts and cook for a minute.
Divide the soup into two bowls and then finish with half each of the garnishes.
Enjoy.
