Bored of plain old chicken breasts... then why not spice them up with this super easy peri peri dry rub. Ok you caught me its not completely 'dry' the recipe calls for 2tbsp of olive oil but that's this will stop your spices burning..
Its carries a smokey mild heat that the family will love, simply rub it over your favourite cut of chicken, cook it through in the oven, grab some tortilla wraps and ta-dah your taco night is sorted..!!
You can always make some of my Fakeaway Nandos to pour all over it like in the picture for an extra kick!!
Prep time 10 mins
Cooking time 25-30mins
1/2 tsp onion powder
1/2tsp garlic powder
1/2tsp dried oregano
1/2tsp smoked paprika
1/2tsp ground ginger
1tsp cayenne pepper
1/4 tsp salt
2tbsp olive oil
2 chicken breasts approx 200g in weight each
1tbsp olive oil (for cooking)
1 lime
Mix all of the peri peri seasoning ingredients in a mixing bowl and add your chicken breasts, coat well.
I like to use breasts so I would cook this the following way... (see tips for chicken legs)
Preheat the oven to 170c and place a baking tray in there while its heating up.. we're going to put the chicken on this to finish cooking it through and we don't want the tray to be cold when we do this.
Add 1tbsp of olive oil to a frying pan and pace the chicken breasts skin side down and cook for 5 mins on a medium heat, after 5 mins turn the chicken over and cook for another 5 mins, then seal the sides quickly.
Now carefully get the tray out of the preheated oven, place the chicken breasts on there skin side up and pop it in the oven for 15mins.
After 15 mins take it out the oven and let it rest for 3 mins, now slice and check that it is cooked all the way through and serve.
If its not completely white all the way through pop them back in the oven for 5 mins, this will depend on the weight of your chicken breasts. I find this time perfect for breasts around 200g each.
If using chicken legs simply pop them straight in a preheated oven at 180c for 45 mins.
Always make sure chicken is completely white and the juices run clear when sliced.
