What's better then a peanut butter and jam sandwich? Peanut butter and jam French toast sandwich with crispy bacon bits.. and my secret ingredient is SKIPPY® Peanut butter, if you enjoy your peanut butter absolutely packed with the finest American peanuts giving a nut packed taste and creamy texture that melts in the mouth, then this is the one for you to!! This recipe is super fun and adding the bacon creates a delicious savoury rest bite to the otherwise sweet sandwich. Ready in a jiffy and eaten even quicker.

2 rashers of smoked bacon
1tsp olive oil
4 slices of brioche bread
Good quality peanut butter, I love to use SKIPPY® super chunk
Raspberry jam
2 eggs, whisked
1tbsp butter
Icing sugar for dusting
Firstly you need to prepare the bacon, this is the most time consuming part but will only take a few minutes.
Cut the bacon into very thin strips, and then dice the strips as finely as you can, a sharp knife will really help with this.
Heat a small frying to a high heat add the oil and fry the bacon pieces until crisp, remove and put onto a piece of kitchen towel to drain.
Now heat a non stick pan or preferable a cast iron pan, use a medium heat.
Add the butter and begin to gently melt, we don't want the butter to turn brown so don't have the heat up to high.
To prepare the French toast, first take on slice of brioche and spread some peanut butter onto it, now add the jam on top of the peanut butter, then pop another slice on top of the jam. Dip your sandwich into the whisked egg on both sides and then add to the warm pan.
Cook on one side for 3 minutes then flip and cook on the other side for 3 minutes.
Serve on to a plate, sprinkle over the bacon bits and dust with icing sugar, enjoy while its warm.
Repeat with the the remaining ingredients.
