Add a real burst of flavour to your potato wedges with this amazing spice blend, this will certainly pimp up any midweek dinner. It also works wonderfully with sweet potatoes.

6 Maris Piper potatoes, unpeeled and cut into wedges
2tsp paprika
2tsp garlic powder
1tsp onion powder
2tsp salt
2tsp ground pepper
2tsp dried parsley
oil for oven roasting, about 4tbsp
Pre heat your oven to 170c.
Put the wedged potatoes in a saucepan of salted boiling water, reduce heat a little and par boil for 10 mins, drain and then allow to steam and cool for 5 mins.
In a large bowl mix all of the spices and oil and then add the potatoes carefully coating them completely in all of the mixture.
Pop on a baking tray and bake in the oven until tender on the inside and crispy on the outside, this should take about 30 mins.
Remove from the oven and serve with a big dollop of dipping sauce.
