A delicious one pot rice dinner that will have you going back for more and more! Flavoured using a handy ready made spice paste, my Indian Style rice is quick and easy making it a perfect speedy midweek meal. I love to add fat juicy prawns to my rice but feel free to leave them out if you'd like to make the recipe even more low cost then it already is!
This recipe will easily feed 4 and for less then 450calories per portion what's not to love!

Cooking time less then 30mins
300g raw king prawns
1tsp Garam masala
1.5tbsp olive oil
1onion, diced
1 red pepper, diced
10g ginger paste
10g garlic paste
1x 70g pot of Pataks Madras paste
1x 400g tin of chopped tomatoes
230g basmati rice, soaked and rinsed
Handful of fresh spinach
20g or a small handful of chopped fresh coriander
400ml chicken stock
In a bowl sprinkle the raw prawns with Garam masala and a small pinch of salt, set aside.
In a non stick pan with a lid available heat the oil on a medium heat, add the onion and cook for around 5mins until beginning to soften.
Now add the diced pepper and cook for another couple of mins.
Add in the garlic and ginger paste, cook until fragrant.. a minute will do and don’t let it burn.
Now add the curry paste and a splash of water, cook for two mins stirring often.
Next up add the tomatoes, rice, spinach, most of the chopped coriander and a small pinch of salt and stir until well mixed.
Add the hot chicken stock and prawns and cook uncovered on medium to high until the stock is at the same level as the rice.
Stir to make sure the rice isn’t stuck to the pan, cover and reduce the heat to very low.. (almost off) and leave for 12minutes. Do not uncover until this time!!!
After 12 mins check the prawns are cooked through then serve it up in to bowls with a spoonful of yoghurt, some more chopped coriander and some cashews (this part is optional)
