Mint Chimichurri

This is a perfect accompaniment to sweet lamb or a juicy steak, if you fancy a lighter roast dinner in the hotter months then this is the sauce for you!! Packed with punch and ready in 10mins what's not to love.

Resting time 5 mins

Ingredients

Handful of fresh mint, roughly 30g

Handful of fresh parsley, roughly 20g

1 garlic clove, grated

4tbsp extra virgin olive oil

2tbsp red wine vinegar

Juice of 1/4 of a lemon

Course Salt and Pepper to taste, I use about 1tsp of each.

Method

Chop the parsley and mint as finely as you can, and then pop in a bowl.

Add all of the other ingredients and mix well.

Leave for 10 mins so the flavours can get to know each other, then have a little taste and tweak any seasoning.

You're looking for a glossy and zingy dressing, when your happy with the seasoning enjoy it over some lovely blushing lamb!!
