Israeli Salad

Step up your salad game with this deliciously zingy salad from the Middle East, and the best thing about it is it couldn't be easier!! Using very few fresh ingredients its sure to impress. You can dice all the ingredients as finely or as chunky as you like just be sure to chop the all about the same size.

Ingredients

1 cucumber, cored and diced

1 red onion, diced

1 red bell pepper, cored and diced

250g tomatoes, diced (I like to use cherry tomatoes)

Handful finely chopped mint

Handful finely chopped parsley

2tbsp extra virgin olive oil

Juice of half a lemon (3tbsp)

Salt and Pepper to taste

Method

In a bowl, mix together the cucumber, onion, red pepper, tomatoes, mint and parsley.

Drizzle over the extra virgin oil and lemon juice, give it a stir.

Lastly a fresh crack of salt and pepper, stir again and leave for 10 mins to let the flavours mix together.

That's it, serve with your favourite, meat or fish, this works incredibly well with my chicken shawarmas!!
