If you fancy making a super simple sauce to accompany your plain old chicken breasts then this is the recipe for you! I came up with this recipe as I had some chicken breasts and hummus eft over in the fridge, I decided to jazz up the plain hummus a bit with some dried herbs and spices and spread on top of my chicken breasts, a quick bake in the oven and I had the most deliciously healthy dinner!
This recipe works really well with salmon to just reduce the oven cooking time a little until the salmon is cooked through.

2 chicken breasts
Salt & Pepper
150g hummus
1tsp hot smoked paprika
1tsp dried oregano
1/2tsp onion powder
To Serve
Cooked grilled Mediterranean veg
Warm flatbreads
Preheat your oven to 180°c fan.
Pat dry your chicken breasts and season on all sides with salt and pepper.
Mix 150g of hummus with the paprika, oregano and onion powder.
Spread the hummus mix on top or the chicken breast and then place them on to a baking tray.
Pop them in to the oven until white and the juices run clear, this should take around 25mins depending on the size of your chicken breasts. (Always ensure chicken is fully cooked before consumption)
Serve on warm flatbreads and grilled med veg.
