Giant Peanut Butter Cookie

What's better the 12 peanut butter cookies..? One giant one that you can share with all of your friends and family!! If you want to get some serious peanut butter flavour into them then I seriously suggest using SKIPPY® Peanut butter because this peanut butter tastes exactly how peanut butter should taste, made from the finest American peanuts!!

This recipe is as easy as they come, you can use it to make 12 individual cookies or stick to the recipe and make one super fun giant cookie. The giant cookie is cooked in an oven proof cast iron pan or non stick frying pan.

Worried about portion control...? This cookie is meant as a sweet treat so it will easily serve 12-15 people so no need to worry, no different to eating just 1 cookie.

Ingredients

60g unsalted butter, softened

70g Good quality peanut butter, I love to use SKIPPY® Extra Smooth

70g granulated sugar

80g soft brown sugar

1 large egg

185g plain flour

1/2tsp baking powder

70g chocolate chips or smart like sweeties

To Serve (optional)

Method

Preheat your oven to 175ºc fan.

In a large mixing bowl, mix the butter and peanut butter together until well mixed and smooth.

Now add both of the types of sugar and the egg, mix well until combined and smooth.

Sift in the flour, add the baking powder, and fold in to the mixture, try not to over work it. Soon enough you should get a lovely smooth cookie dough mixture.

Mix in half of the chocolate chips or chocolate sweeties.

Lightly grease your skillet or non stick frying pan, whichever you are using.

Pop all of the cookie dough in to the middle of the pan and spread it our evenly across the pan so its about half an inch thick.

Sprinkle over your remaining choc chips or sweeties.

Pop in to the oven, for a softer mixture cooke for around 25mins or until brown round the edges and just cooked in the middle. Cook for slightly longer if you prefer your cookie crunchy all the way through.

Carefully remove from the pan and allow to cool and then serve as it is divided into wedges or sometimes I like to add a little ice cream and some chocolate sauce.

Tip

If you'd prefer to make 12 individual cookies, line a baking tray with baking paper, and divide the mixture into 12-15 balls and pop them in the oven for around 10mins.
