Fajita Traybake

I absolutely love Mexican food, and, if you hadn't of guessed by now, easy recipes, so what happens when you combine the two...? Awesomeness!! This is a no fuss way to enjoy fajitas, all you need to remember is to add the tomatoes half way through!! Serve it up with long grain rice or tortilla wraps, this is a meal your family will want time and time again.

Ingredients

1tbsp garlic powder

1tbsp onion powder

1tbsp dried oregano

1tbsp ground ginger

2tsp smoked paprika

2tsp cayenne (use a bit less if you prefer it milder)

2tbsp olive oil

6 chicken thighs, bone in (skin removed for less calories)

2 sweet potatoes, cut in 1inch cubes, no need to peel

1 large onion, thickly sliced

2 peppers, cored and sliced (I like to use a red and an orange for colour)

1 red chilli, deseeded and sliced (optional)

4 fresh mini corn cobs

200g cherry tomatoes, on the vine

Salt and pepper to taste

To Serve

1 lime cut into wedges

Small handful of chopped coriander

Method

Pre heat the oven to 170c

In a bowl combine all of the spices and the olive oil (the first 7 ingredients on the list) Now add the chicken thighs and be sure to coat them well, you can use straight away or make in advance and allow to marinate.

In a roasting dish scatter the sweet potatoes, onion, peppers and red chill. Now sit the chicken thighs and corncobs on top and season with salt and pepper.

Pop in the oven for 20mins.

After 20mins take out from the oven and add the cherry tomatoes, drizzle 1tbsp of oil over the top and then pop back in the oven for another 20 mins.

After that time remove from the oven, check the chicken is cooked through and then garnish with the lime wedges and fresh coriander.

Serve with long grain rice or tortilla wraps... or both.

Tip:

Me and my hubby love nothing more then meat on the bone but I know for some young families this can be awkward... no problem just switch the thighs for breasts. Buy 2 large breasts, cut them in half, cover in the spice mix and instead of adding them at the start with all the rest of the ingredients add them at the same time as the tomatoes. The rest of the ingredients, particularly the sweet potatoes and corn cobs will still need to cook for around 40mins.
