This recipe uses the spice with charred carrots but it will make plenty of spare spice mix for other dishes, it works very well with potatoes!!
Spice up your unloved carrots with this Middle Eastern spice blend known as Za'atar. Its a delightful spice mix that is subtle yet exotic and will jazz up most left over veg, it also works very well with chicken or a nice piece of grilled fish.

Cook time 20 mins
6 carrots, sliced diagonally
2tbsp olive oil
2tbsp Za'atar spice blend (see below)
1tbsp dried oregano
1tbsp ground cumin
1tbsp salt
1.5tbsp sumac
1tbsp sesame seeds
1tsp ground black pepper
Pre heat your oven to 170c.
In a bowl add all of the carrots, the olive oil and 2tbsp of your spice mix, you can save the rest for another time.
Toss the carrots in the spice mix and oil ensuring they are all evenly coated.
Line a baking tray with some baking paper and spread the carrots on the tray. Pop in the oven.
After 10 mins check on the carrots and give them a little turn.
Pop back in the oven for another 10mins until tender and charred on the edges.
Serve over some delicious hummus as a lovely snack or a light lunch.
