Bombay Bubble n Squeak

Brunch is the time to have some fun so why not add abut of fusion to yours. A simple recipe using just a few spices and some left over mash, but paired with all you breakfast musts its an absolute delight.

Ingredients

250g approx of left over mash

Handful of cooked peas

1/2 onion, diced

1 spring onion, finely sliced

1 garlic clove, crushed

1tbsp medium curry powder

1tsp turmeric

1tbsp garam masala

1tsp salt

Knob of butter

1tbsp olive oil

Method

Heat your olive oil in a small frying pan, add your onion, cook gently for a few mins until tender.

Add the spring onion, spices and garlic, allow to cook for a minute if need be add a splash of water.

Once the spices have been nicely cooked off pour the contents of the frying pan in a bowl with the left over mash and peas, mix well.

In the same frying pan add your knob of butter, once melted add you curried mash mixture and cook, to start with don't move it much.

After about 5 mins the potato will have started to take on colour round the edges and bottom, now you can stir it around, leave it again for a few minutes to crisp and brown.

Continue stirring and leaving to colour until you have the desired amount of crispy, gnarly bits throughout your bubble.

Serve and enjoy.... this is once of my favourites!!

Tip:

You can use any left over veg for this recipe, just mix it in with your left over mash, carrots work particularly well in this recipe.

This is also a lovely side dish for an evening meal.
